Welsh Mountain Cider “Stargazing Cider / Seidr Seryddol” 2023 is a beautifully expressive natural cider, made high in the remote Cambrian Mountains under some of the clearest night skies in Wales. This poetic cuvée balances brightness, structure and wild-ferment character, delivering a cider with real depth and a sense of place.
Crafted from hand-picked heritage apples and fermented with wild yeasts, “Stargazing” captures the purity of the fruit and the cool mountain climate. It’s elegant, slightly rustic in the best artisanal way, and full of natural charm — the perfect bottle for slow evenings, good company and watching the stars.
Aroma
Fresh and lifted, with notes of crisp apple, citrus peel and white blossom, followed by hints of stone fruit, gentle spice and orchard earthiness.
Palate
Bright, dry and beautifully balanced. Flavours of fresh apple, pear skin and lemon zest unfold over subtle tannins and a clean mineral line. Wild fermentation adds a delicate complexity, while the 6.7% ABV brings a satisfying weight without losing freshness.
The finish is long, clean and gently aromatic — a thoughtful, well-crafted cider with real finesse.
